Tacos, Italian style

First a word of warning, I am not a cook. I just put things together and sometimes they taste ok, and sometimes they taste more than ok. The below recipe belongs to the latter category in my opinion. Feedback is welcome.

In the evening Esme was wondering what to cook and I decided to help her. We had some parts of vegetables in the fridge that really needed to be used. Also we had some grilled chicken left from the afternoon. Below follows the recipe of what I made:

Ingredients

Heat the oil and add the garlic, onion, chile and chile powder when the oil is really hot. Stir this for a minute or two. Then add the mushrooms, the eggplant, ground oregano and about half a glass of water. Keep stiring this for a few minutes.

Next, add the tomato, the chicken, and the dried oregano. Crush the latter between your fingers when you add it. Stir for a few minutes.

We ate it as follows: put a little red (hot) salsa on a heated tortilla, some avocado, and add the cooked food. The only thing Esme was missing was some salt, so you might want to add some.
